Ombré Protein Pancake Stack

Ingredients
For the pancakes:
- 1 scoop (30g) Bulk Nutrients WPI, WPC, Thermowhey or Protein Matrix in Vanilla flavour
- 1 cup almond flour
- 2 eggs
- 1/3 cup almond milk
- 1/2 teaspoon baking powder
- 1 teaspoon vanilla extract
- Food colouring in shade of your choice
- 1 teaspoon coconut oil - melted
For the topping:
- 1/3 cup Greek yogurt
- 2 tablespoons sugar free maple syrup
- 1/2 cup blueberries
- 2 tablespoons peanut butter
Instructions
- Step 1: Pre-heat a non-stick pan.
- Step 2: Mix all pancake ingredients together.
- Step 3: Pour small amount of mixture into the pan.
- Step 4: When small bubbles appear on the top, flip pancakes and leave for another few minutes.
- Step 5: Add half a drop of food colouring to the raw mixture and stir well.
- Step 6: Pour small amount of mixture into the pan.
- Step 7: When small bubbles appear on the top, flip pancakes and leave for another few minutes.
- Step 8: Repeat steps 5-7 with remaining mixture with each new batch becoming slightly brighter coloured.
- Step 9: Stack in order from brighter to least bright pancakes.
- Step 10: Sprinkle pancakes with toppings and enjoy immediately.
