Vegan Birthday Cake Blondies

Ingredients
Blondies:
- 160g Earth Protein in Salted Caramel, Vanilla or Vanilla Maple
- 2x 400g cans of chickpeas, rinsed and drained
- 165ml sugar-free maple syrup
- 250ml canned light coconut milk
- splash of vanilla
Frosting:
- 200g coconut cream (solid part from a refrigerated can)
- 20g sweetener
Top:
- 20g rainbow sprinkles
Instructions
- Step 1: Preheat oven to 180C.
- Step 2: Food process all blondie ingredients until smooth and thick.
- Step 3: Pour into a square baking tin lined with baking paper and bake for around 35-40mins.
- Step 4: Cool in the tin in the fridge.
- Step 5: Mix together the frosting ingredients and spread over the top of the cooled blondies. Top with rainbow sprinkles and cut into 8 to serve.
