Strawberry Cheesecake Blondies

Ingredients
Blondies:
- 100g Earth Protein in Strawberry (or use Vanilla)
- 250g oats
- 50g sweetener
- 1 egg
- 15g baking powder
- 300g low fat cottage cheese
- 200ml unsweetened almond milk
- splash of vanilla
- 250g strawberries (thaw first if using frozen)
Frosting:
- 200g light cream cheese
- 25g sweetener
- Optional fresh halved strawberries to top
Instructions
- Step 1: Preheat oven to 180C.
- Step 2: Put all blondie ingredients into the food processor. Process until smooth.
- Step 3: Pour into a square baking tin lined with baking paper and bake for around 35-40mins.
- Step 4: While baking, prepare the frosting by mixing the cream cheese and sweetener.
- Step 5: Once baked, cool in the tin before removing and frosting. Cut into 8 and top with half a strawberry.
