Ingredients
White/Vanilla Layer:
- 60g WPC in Vanilla
- 100g desiccated coconut
- 60g light coconut cream (thick part from a refrigerated can)
- 10g coconut oil, softened
Pink/Strawberry Layer:
- 60g WPC in Strawberry (can be subbed for more vanilla flavour)
- 100g desiccated coconut
- 60g light coconut cream (thick part from a refrigerated can)
- 10g coconut oil, softened
- Drops of pink food colouring
Instructions
- Step 1: Blitz the ingredients for the white layer in a food processor until combined.
- Step 2: Press into a lined loaf tin, ensuring you’ve created a smooth, even layer.
- Step 3: Blitz the ingredients for the pink layer in a food processor until combined.
- Step 4: Press the pink layer evenly over the white layer and refrigerate to set. Cut into 8 to serve. Can be kept in the fridge or freezer.
