Orange and Coconut Cookie Dough Cake

Ingredients
Base
- 50g Bulk Nutrients WPC in Vanilla
- 150g chickpea flour
- 130g plain flour
- 70g sweetener
- 70g peanut butter
- 250ml sugar-free lemonade or sugar-free Fanta/Sunkist for even more orange!!
- 1tsp vanilla
- Juice and finely grated rind of half an orange
Orange & Coconut Cream Cheese Frosting
- 150g light cream cheese
- 25g sweetener @natvialiving
- Juice and finely grated rind of the other half of your orange
- 40g desiccated coconut (30g mixed into frosting, 10g sprinkled on top)
Instructions
- Step 1: Preheat oven to 180C.
- Step 2: Mix the flours, protein, sweetener, orange juice & rind, vanilla and peanut butter in a large bowl.
- Step 3: Add the sugar-free lemonade/Fanta and stir until well-combined.
- Step 4: Pour into a large square or loaf tin lined with baking paper. Bake for 20mins (you want it slightly undercooked).
- Step 5: For the frosting, mix the cream cheese, sweetener, orange juice & rind, and 30g of the coconut together. Spread on top of the cooled cake, top with the remaining 10g coconut, and cut into 8.
