Lemon Meringue Tiramisu

Ingredients
Sponge Finger Layers
- 150g ladyfinger or sponge finger biscuits
- 1x 9g sachet sugar-free lemon jelly/jello powder/crystals
- 125ml boiling water
- 125ml cold water
Filling
- 60g Protein Matrix+ in NEW Limited Edition Lemon Meringue Pie flavour
- 500g non-fat plain Greek yoghurt
- 20g sweetener
- splash of vanilla
Top
- 40g mini meringues
Instructions
- Step 1: Mix the filling ingredients together in a large bowl until combined and smooth. Set aside.
- Step 2: Place the jelly/jello powder in a shallow dish (one that will allow you to dip the biscuits into). Add the boiling water and mix until the powder is dissolved, then add the cold water.
- Step 3: Dip half of the sponge biscuits into the jelly/jello liquid and arrange evenly into the bottom of a serving dish/tin.
- Step 4: Spread half of the filling evenly onto the biscuit layer.
- Step 5: Repeat Step 3 with the other half of the biscuits, layering on top of the filling.
- Step 6: Repeat Step 4 with the other half of the filling, spreading over the second layer of biscuits.
- Step 7: Pour any remaining jelly/jello liquid over top layer, then top with mini meringues.
- Step 8: Refrigerate overnight/a few hours to allow biscuits to soften. Cut into 6 to serve.
