Lemon Meringue Pie Overnight Weetbix

Ingredients
Base
- 2x Weetbix
- 100ml unsweetened almond milk
- 30ml sugar-free maple syrup
Filling
- 200g non-fat plain Greek yoghurt
- 30g Bulk Nutrients Protein Matrix+ in NEW Lemon Meringue Pie flavour
- 1x 7g sachet of sugar-free lemon jelly
Top
- 5g crushed meringues
Instructions
- Step 1: Crush the Weetbix into the bottom of a small dish or container, then add the almond milk and syrup evenly over the top.
- Step 2: In a separate small bowl, mix together the yoghurt and protein.
- Step 3: Melt the jelly crystals in a small bowl by adding just enough cold water to cover, then whisking with a fork to make a paste and microwaving for around 10-20 seconds.
- Step 4: Add the jelly mixture into the filling mixture and stir until combined. Pour over your Weetbix base and refrigerate overnight (or a few hours).
- Step 5: Top with crushed meringues to serve.
