Ingredients
Balls
- 100g Limited Edition Lemon Meringue Pie PM+
- 80g Desiccated coconut
- 70g Light cream cheese
- 10g Coconut oil, melted
- 20g Sweetener
- Juice & finely grated rind of a small lemon
- Splash of vanilla
Coating
- 20g Desiccated coconut
Instructions
- Step 1: Blitz the ball ingredients in a food processor until combined.
- Step 2: Put the extra desiccated coconut into a small bowl.
- Step 3: Roll the ball mixture into 8 equal-sized balls.
- Step 4: Roll each ball in the desiccated coconut until evenly coated. Place each ball onto a lined tray to set in the fridge. Can be kept in the fridge or freezer.
