Spiced Cherry Chai Blondies

Ingredients
- 100g Earth Protein in Vanilla Chai
- 250g oats
- 50g sweetener
- 1 egg
- 400g can cannellini beans, rinsed and drained (drained weight 225g)
- 15g baking powder
- 100g high protein, non-fat plain Greek yoghurt
- 200ml unsweetened almond milk
- 1tsp cinnamon
- 1tsp nutmeg
- splash of vanilla
- 150g pitted cherries (thaw first if using frozen)
- 80g white chocolate chunks
Instructions
- Step 1: Preheat oven to 180C.
- Step 2: Put all blondie ingredients except for the cherries and the white chocolate into the food processor. Process until smooth, then gently stir through the cherries and white chocolate chunks.
- Step 3: Pour into a square baking tin lined with baking paper and bake for around 30-35mins.
- Step 4: Once baked, cool in the tin before removing. Cut into 8 to serve.
