Thai Beef Salad

Ingredients
- Juice of 2 limes
- 2 clove garlic
- 1 tbs fish sauce
- 1 tbs reduced salt soy sauce
- 2 tbs sesame oil
- 2 tbs grated ginger
- 1 tbs coconut sugar
- 250g rump steak
- 150g cherry tomatoes
- 150g cucumber
- Handful mint
- 1 bunch of coriander
- 2 cups mixed salad leaves
Instructions
- Step 1: Mix lime juice, garlic, fish sauce, sesame oil, ginger and coconut sugar to make a marinate for the steak. Marinate for 2 hours, best if left overnight.
- Step 2: While steak is marinating, chop the salad leaves, coriander, mint, cucumber and tomatoes. Toss together and separate into 2 bowls.
- Step 3: After 2 hours cook steak to your liking, cut into strips and serve on the top of your tossed salad.
