Healthy Open Taco Salad

Ingredients
Salad
- 2 cups water
- 1 cup quinoa
- 1 can mixed beans
- 1 cup corn
- 1 sachet taco seasoning
- 1 cup cherry tomatoes halved
- ½ red capsicum diced
- 3 big leaves lettuce sliced
Instructions
- Step 1: In a medium pot over medium heat, bring water to a boil. Add quinoa, reduce heat to a simmer, then cover and cook 12 minutes or until water is absorbed. Remove from heat, but keep covered for 5 minutes.
- Step 2: Add beans, corn, and taco seasoning to warm quinoa and toss to combine.
- Step 3: In a large bowl, add lettuce, red onion, tomatoes, and bell pepper, add quinoa mixture.
- Step 4: Serve with chipotle dressing and tortilla chips.
