Raw Protein Hot Cross Buns

Ingredients
For the bun:
- 3 scoops Bulk Nutrients' Muscle Food 101 in Vanilla
- Zest of 1 orange
- 1 teaspoon cinnamon and nutmeg
- 2 teaspoons coconut sugar
- 1 tablespoon desiccated coconut
- 1 cup (or 3 protein scoops) almond meal
- 1 teaspoon vanilla essence
- 1 cup dried mixed fruits (we used dated, raisins, cranberries)
- 1/3 cup water
For the glaze:
- 1 tablespoon pure or no added sugar maple syrup
- 1 tablespoon cacao butter – melted
For the cross:
- 3 tablespoons coconut cream – thick component
- 1 teaspoon vanilla essence
- 1 tablespoon cacao butter – melted
- 1 tablespoon WPI, WPC, Protein Matrix+ or Thermowhey in Vanilla
- Note: You will need a piping bag
Instructions
- Step 1: Place all bun ingredients into a food processor and blend until just combined.
- Step 2: Using damp hands shape into thick ‘disk’ bun shapes and place onto a lined try.
- Step 3: Make glaze by combining the maple syrup and butter and brush over the buns.
- Step 4: Make cross by combining all ingredients in a bowl. Place into piping bag and carefully pipe crosses onto the buns.
- Step 5: Store in the fridge or enjoy immediately.
