Oreo Cheesecake Cookie Pie

Ingredients
Cookie Base:
- 80g Earth Protein* in Vanilla, Vanilla Maple, Salted Caramel or Chocolate flavour
- 80g plain flour
- 40g sweetener
- 1/2 tsp bi-carb soda
- 80ml sugar-free maple syrup
- 50g non-fat plain Greek/high-protein yoghurt
- 60g Nutella
- splash of vanilla
- splash of unsweetened almond milk if needed to form the dough
Filling:
- 200g light cream cheese
- 200g low-fat cottage cheese
- 25g sweetener
- Splash of vanilla
Top:
- 60g Oreos, broken into pieces
Instructions
- Step 1: Preheat oven to 180C.
- Step 2: Mix the dry cookie base ingredients together in a large bowl.
- Step 3: Stir in the wet ingredients, then continue to knead with your hands until a dough forms.
- Step 4: Press the dough into the base and sides of a lightly sprayed pie tin.
- Step 5: Food process the filling ingredients until smooth and creamy, then pour into the cookie base and top with the Oreo pieces.
- Step 6: Bake for 25-30mins, then allow to cool completely in the tin. Cut into 8 to serve.
