One Pan High Protein Fajita Chicken

Ingredients
- 500g chicken breast
- 2 red onions
- 2 yellow capsicums
- 350g potatoes
- 25g Collagen Protein - raw
- 500ml water
- 25g Fajita seasoning
- 1tbs paprika
- 1tbs curry powder
- 1tsp garlic powder
- 1tsp chilli powder
- 1stp onion powder
Instructions
- Step 1: Cut all the veg and chicken into 1cm x 1cm cubes.
- Step 2: Mix paprika, curry powder, garlic powder, chilli powderand onion powder together on a plate and coat chicken breast.
- Step 3: Boil potatoes in a microwave for 10 minutes.
- Step 4: Cook chicken in a non-stick pan – once cooked remove and sit to the side for later.
- Step 5: In a shaker add water, Bulk Nutrients Collagen Protein in raw and fajita seasoning and shake to mix together. Add to pan and bring to boil.
- Step 6: Once stock is boiling add onion and capsicum and cook until soft, simmer until liquid reduces. If it does not reduce add 1tbs corn flour to thicken.
- Step 7: Once liquid has thickened add chicken.
- Step 8: Serve with greek yogurt and enjoy.
