Key Lime Pie

Ingredients
Base
- 30g Earth Protein in Vanilla (*see notes)
- 125g rolled oats
- 45ml sugar-free maple syrup
- 20g coconut oil, melted
Filling
- 60g Bulk Nutrients Collagen Protein in Vanilla (*see notes)
- 450ml unsweetened almond milk
- 60g custard powder
- 2x 7g sachets sugar-free lime jelly crystals
Instructions
- Step 1: Blitz the base ingredients in a food processor until combined, then press into a lined pie tin.
- Step 2: Place all filling ingredients except for the jelly crystals into a small saucepan.
- Step 3: Put the jelly crystals into a small bowl and add just enough cold water to cover. Stir with a fork to form a thick paste, then microwave for about 20 seconds to melt. Stir again, then add to the filling ingredients in the saucepan.
- Step 4: Continuously whisk over low heat until a thick, glossy custard forms.
- Step 5: Pour over the base, then refrigerate for a few hours to set. Cut into 8 to serve.

*NOTE - you can use any type of vanilla protein in the base and filling (Earth, Collagen Protein, WPC, WPI, etc), however, I find that Earth Protein makes the best base (whey-based will be stickier), and Collagen Protein is heat-stable so will dissolve well to ensure a lump-free custard.
