Chickpea Blondies

Ingredients
- 110g WPI or WPC in Chocolate
- 400g Can of Chickpeas (drained and rinsed)
- 40ml Skim Milk
- 50g Peanut Butter
- 50g Chocolate chips or cut up chocolate
- 75g Sugar-free maple syrup
- 5g Baking Soda
Instructions
- Step 1: In a food processor, blitz chickpeas until smooth.
- Step 2: Add peanut butter, protein powder, maple syrup and baking soda blitz until combined.
- Step 3: Add skim milk as needed.
- Step 4: Stir through 3/4 of the chocolate chips.
- Step 5: Spoon into a baking tin (the mixture will be thick).
- Step 6: Sprinkle the remaining chocolate on top and bake for 20 mins at 160 degrees.
- Step 7: Cut into 12 slices.
- Step 8: Serve warm.
