Blueberry Cheesecake Blondies

Ingredients
- 250g oats
- 100g Earth Protein in Vanilla, Vanilla Maple, Vanilla Chai or Salted Caramel
- 250g blueberries (thaw if using frozen)
- 300g low-fat creamed cottage cheese
- 1 egg
- 15g baking powder
- 50g sweetener
- 200ml unsweetened almond milk
- splash of vanilla
Instructions
- Step 1: Preheat oven to 180C.
- Step 2: Put all ingredients except for the blueberries into the food processor. Process until smooth.
- Step 3: Gently stir through the blueberries.
- Step 4: Pour into a square baking tin lined with baking paper and bake for around 25-30mins.
- Step 5: Cool in the tin before removing and cutting into 8 to serve.
