White Christmas Crackle Bars

Ingredients
- 50g protein powder in Vanilla (any except for Micellar Casein)
- 60g rice bubbles
- 30g dried cranberries
- 30g pistachios
- 20g desiccated coconut
- 100g white chocolate
- 30g coconut oil
Instructions
- Step 1: Mix together the rice bubbles, dried cranberries, pistachios and desiccated coconut in a large bowl.
- Step 2: Melt together the white chocolate and the coconut oil in a separate small bowl.
- Step 3: Add the protein powder to the chocolate mixture and stir until smooth.
- Step 4: Stir the chocolate mixture into the rice bubble mixture until evenly coated, then press into a small lined loaf tin. Refrigerate until set, then cut into 8.
