Spooky Halloween Cookies

Ingredients
For the cookies:
- 60g (2 scoops) Bulk Nutrients Whey Protein Concentrate in Vanilla
- 2 teaspoons of zero/low-calorie sweetener
- 1 egg
- 1 egg white
- 30g wholemeal flour
- 100g organic butter and /or coconut oil – softened
- 1/3 cup coconut sugar
- 1 tablespoon water
- 1 teaspoon baking powder
- 1 teaspoon vanilla essence
For the icing:
- Food colouring
- 1 packet Bulk Nutrients Protein Hot in Vanilla Chai
- 4 tablespoons coconut oil – melted
- Dark chocolate
Instructions
For the cookies:
- Step 1: Set oven to 180 degrees and line two trays with baking paper.
- Step 2: With an electric beater, whip butter and/or coconut oil and zero/low-calorie sweetener until pale and creamy.
- Step 3: Add the egg and egg white and continue to whip.
- Step 4: Turn down to a lower folding speed, or use a wooden spoon to mix in remaining cookie ingredients.
- Step 5: Once mixed turn on to a floured surface, or between two sheets of baking paper and roll out to 1cm thick.
- Step 6: Use a cookie cutter to cut dough and place on prepared trays.
- Step 7: Bake for 10-12 minutes until golden brown and allow to cool on a wire rack.
For the icing:
- Step 1: Mix three tablespoons of coconut oil with the Protein Hot until a thick paste forms. Add food colouring as desired and spread over cookies.
- Step 2: Melt dark chocolate with one tablespoon of coconut oil until a thin icing forms.
- Step 3: Use this to get creative with cookie designs and start topping with spooky artwork!
