Pavlova Overnight Weetbix

Ingredients
Base:
- 2x Weetbix
- 100ml unsweetened almond milk
- 30ml sugar-free maple syrup
Filling:
- 200g non-fat plain Greek/high protein yoghurt
- 30g Micellar Casein in Vanilla (I use casein protein for thickness, but you can use any of our vanilla flavoured protein powders)
- splash of vanilla
Top:
- 85g passionfruit pulp
- 10g mini meringues
Instructions
- Step 1: Crush the Weetbix into the bottom of a small dish or container, then add the almond milk and syrup evenly over the top.
- Step 2: In a separate small bowl, mix together the yoghurt, vanilla and protein.
- Step 3: Put the filling mixture on top of the Weetbix layer.
- Step 4: Top with passionfruit pulp, then refrigerate overnight (or a few hours) ready for the next day! Add the mini meringues when ready to serve.
