Ice Cream Cookie Sandwiches

Ingredients
- 80g Earth Protein Strawberry
- ½ cup (63g) Coconut Flour
- 20g Stevia
- ½ Teaspoon Bi-carb Soda
- 1 cup (245g) Greek Yogurt
- 1tbs Almond Essence
- ½ cup Strawberries, cut into small chunks
Instructions
- Step 1: Preheat oven to 180C.
- Step 2: Mix all dry ingredients together well.
- Step 3: Make a well in the middle of dry ingredients and add yogurt and almond essence. Mix until it has just formed but is still slightly wet.
- Step 4: Add strawberries and use your hands to combine the mixture into a dough.
- Step 5: Roll into 10 cookies and bake for 10min.
- Step 6: Allow to cool on wire rack.
- Step 7: Scoop ice cream onto one cookie and sandwich together with second cookie.
