High-Protein Vanilla Slice

Ingredients
- 2x 166g sheets of puff pastry
- 100g Bulk Nutrients WPC in Vanilla
- 100g vanilla pudding mix (I used Aeroplane Jelly Vanilla Dessert Mix)
- 900ml unsweetened almond milk
- Splash of vanilla
- 30g gelatin
- Optional - dusting of icing sugar to serve
Instructions
- Step 1: Pre-bake the pastry sheets according to package directions until puffed and golden. Allow to cool.
- Step 2: Using an electric mixer/beaters, combine all filling ingredients except for the gelatin until smooth.
- Step 3: Put the gelatin in a small bowl and add enough cold water to just cover. Whisk into a paste with a fork, then microwave for around 20 seconds to melt. Cool slightly, then add to the filling mixture and beat until smooth.
- Step 4: Place one of the pastry sheets into a perfectly fitting (25x25cm) square baking tin or dish lined with cling wrap. Pour in the filling, then top with the second pastry sheet. Refrigerate for a few hours until set.
- Step 5: Once set, carefully remove from the dish and cut into 8. Dust with icing sugar to serve.
