High Protein Cold Brew Muffins

Ingredients
- 100g Earth Protein in Cold Brew Coffee
- 120g oats
- 60g self-raising flour
- 70g brown sweetener
- 10g baking powder
- 70g peanut butter
- 150ml espresso
- 200ml unsweetened almond milk
Instructions
- Step 1: Preheat oven to 180C.
- Step 2: Blitz all ingredients except for the choc chips in the food processor until combined.
- Step 3: Stir the choc chips through the muffin mixture.
- Step 4: Divide mixture evenly into a non-stick or lined 12-hole muffin tray.
- Step 5: Bake for around 15 minutes, then remove gently from the muffin tray and allow to cool on a wire rack.
