High Protein Black Bean & Quorn Burgers

Ingredients
- 2 cans black beans, drained & rinsed
- 300g Quorn mince
- 100g egg whites
- 1 small onion, diced
- ½ red capsicum, diced
- 20g breadcrumbs
- 40g 50% less added salt & sugar ketchup (can sub for BBQ)
- 1 tbsp Worcestershire sauce
- 40g WPC raw (unflavoured)
- 3-4 gloves garlic, minced
- 1 ½ tsp ground cumin
- ½ tsp garlic powder
- ½ tsp smoked paprika
- Salt & pepper
Instructions
- Step 1: Preheat oven to 180. Meanwhile, sauté onion, garlic and capsicum over medium heat until soft (about 5 mins).
- Step 2: Pat the black beans dry and add to a food processor along with the cooked vegetables and remaining ingredients except the Quorn. Pulse the mixture, leaving some larger chunks.
- Step 3: Add in the Quorn and pulse a couple more times. Spoon the mixture out and form into patties. Place patties on a lined baking tray and bake for 10 minutes on each side (or air-fry for 7 mins each side).
