High Protein Black Bean & Quorn Burgers

Makes: 7 burger pattiesCalories: 171Difficulty Level: EasyPreparation time: 10 minutesCook time: 15 minutesTotal time: 25 minutes

Ingredients

  • 2 cans black beans, drained & rinsed
  • 300g Quorn mince
  • 100g egg whites
  • 1 small onion, diced
  • ½ red capsicum, diced
  • 20g breadcrumbs
  • 40g 50% less added salt & sugar ketchup (can sub for BBQ)
  • 1 tbsp Worcestershire sauce
  • 40g WPC raw (unflavoured)
  • 3-4 gloves garlic, minced
  • 1 ½ tsp ground cumin
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • Salt & pepper

Instructions

  1. Step 1: Preheat oven to 180. Meanwhile, sauté onion, garlic and capsicum over medium heat until soft (about 5 mins).
  2. Step 2: Pat the black beans dry and add to a food processor along with the cooked vegetables and remaining ingredients except the Quorn. Pulse the mixture, leaving some larger chunks.
  3. Step 3: Add in the Quorn and pulse a couple more times. Spoon the mixture out and form into patties. Place patties on a lined baking tray and bake for 10 minutes on each side (or air-fry for 7 mins each side).
