Cold Brew Coffee Cake

Ingredients
For the cake base
- 80g Collagen Protein in Cold Brew Coffee
- 150g oats
- 100g self-raising flour
- 10g baking powder
- 100ml espresso
- 150ml unsweetened almond milk
- 70g peanut butter
- 70g sweetener
- Splash of vanilla
For the frosting
- 30g Collagen Protein in Cold Brew Coffee
- 150g light cream cheese
Instructions
- Step 1: Preheat oven to 180C.
- Step 2: Grind the oats into a coarse powder using a food processor. Add the remaining cake ingredients and process them again. Alternatively, you can use oat flour and mix it by hand in a bowl.
- Step 3: Pour into a large loaf tin lined with baking paper. Bake for around 40mins until cooked through.
- Step 4: Mix together the frosting ingredients, then spread on top of the cooled cake.
