Rocky Road Protein Balls

Ingredients
- 40g WPC Chocolate
- 10 x sugar free marshmallows
- 10 x sugar free marshmallows
- 1 tsp vanilla bean powder or essence
- 1 cup whole or quick oats
- 1/2 cup shredded coconut
- 1/3 cup cashews or peanuts chopped
- 70g dark chocolate
- 2 tsp coconut oil
- 2 tsp maple syrup or honey
- 1 Tbsp peanut butter or other nut butter (can omit)
- Water or milk as needed (we added about 2 Tbsp)
Instructions
- Step 1: Mix your dry ingredients in a bowl to combine.
- Step 2: Melt your chocolate, nut butter and coconut oil together.
- Step 3: Make a well in the middle of your mix and add all your wet ingredients. Stir well and add in 1-2 tsp of water at a time if the mix is a bit dry.
- Step 4: Roll into desired sized protein balls. Your mix should make about 16 x 1 to 1-1/2 Tbsp sized balls. Roll through desiccated coconut.
- Step 5: Drizzle with additional chocolate if you like. Best stored in the fridge.
